I try to eat healthy as much as I can, but I am sure all of you know that it can be tough, and some days are better than others. Having a Whole Foods not too far my office helps and I’m always finding new options there. During a recent trip there, while looking for something really light, salad-like, and fresh, I found this. It is made of really simple ingredients so it’s really quick and easy to throw together and very easy to replicate at home!
Summer Vegetable Salad
6 cups of corn preferably fresh but canned or frozen will work too! You can grill or roast this slightly for a little added flavor.
1 large cucumber
1 medium zucchini
1 medium yellow squash
1 green bell pepper
1 red bell pepper
1 orange bell pepper
1 yellow bell pepper
1 fresh jalapeno
1 (14oz) Fat Free Feta Cheese
1 tsp. salt
1 tsp. black pepper
1/4 Cup Cider Vinegar
Directions: Dice vegetables into small pieces and combine in a large bowl. Add vinegar, salt, pepper and feta cheese.
There is a lot of dicing so grab a sharp knife (be careful) and practice your knife skills.
This recipe will make a large bowl, but it keeps nicely in the fridge. Or you can share it with your sisters like I did! In addition to eating it as is, they recommend adding it to a lettuce salad or Chicken quesadillas!
It’s crisp, crunchy and satisfying. Oh yeah, and this recipe has NO fat so what’s better than that??

These are actually just paper plates. i think I picked them up from homegoods but I loved them soooo much I got them. I’ve been hanging onto them for probably 2 years and this is the first time I’ve used them. I’m savoring them.
